Artichoke and Cream Cheese Dip

There is so much parmesan cheese in this original recipe it really should be called Parmesan Artichoke Chip. Only Paula would put together cheese, cream cheese and mayo then bake it up and call it a dip.  This is, undoubtedly, a winning southern combination. As with most southern dishes it is a nightmare in terms of nutrition but with the addition of a few vegan alternatives like vegan cream cheese, Veganaise and the all important nutritional yeast you have a dip that is a bit nicer on the hips and just as delicious on the lips. The veganized version also has 1/2 the sodium of the original.

8 ounce vegan cream cheese, at room temperature
1 cup Veganaise
1/4 cup nutritional yeast
1 can (14 ounces) artichoke hearts, drained and coarsely chopped
3 scallions, finely chopped
1 clove garlic, finely chopped
3/4 teaspoon hot sauce
1/4 teaspoon black pepper
1/8 teaspoon salt
Crackers, tortilla chips, or crusty bread, for dipping

1. Preheat the oven to 350°F.

2. Using an electric mixer, beat the cream cheese until it is smooth. Beat in the mayonnaise until combined. Add nutritional yeast, the artichoke hearts, scallions, garlic, hot sauce, black pepper, and salt and mix with a spatula until combined.

3. Scrape the mixture into a wide, shallow gratin or baking dish that’s pretty enough for serving. Bake until the dip is bubbling and the top is golden, 30 to 40 minutes. Serve hot, with crackers, tortilla chips, or crusty bread for dipping.
